Ingredients

  • 1 shallot
  • 2-3 rashers of bacon
  • sunflower oil
  • 2-3 leftover, chopped cooked or raw carrots
  • 2-3 leftover, chopped cooked or raw parsnips
  • ½ half a small, washed and sliced leek
  • turkey or chicken stock
  • 150 g (5oz) shredded leftover cooked turkey
  • red Thai curry paste

Method

  1. Fry shallot and rashers of bacon in a little sunflower oil until tender.
  2. Add chopped raw or cooked leftover carrots and parsnips, and half a small, washed and sliced leek. Fry for 3-4 minutes then add turkey or chicken stock to cover and simmer for 5 minutes.
  3. Add shredded turkey, season if necessary, then add a little red Thai curry paste to taste, to give heat and pungency as desired.
