Ingredients
- 1 shallot
- 2-3 rashers of bacon
- sunflower oil
- 2-3 leftover, chopped cooked or raw carrots
- 2-3 leftover, chopped cooked or raw parsnips
- ½ half a small, washed and sliced leek
- turkey or chicken stock
- 150 g (5oz) shredded leftover cooked turkey
- red Thai curry paste

Method
- Fry shallot and rashers of bacon in a little sunflower oil until tender.
- Add chopped raw or cooked leftover carrots and parsnips, and half a small, washed and sliced leek. Fry for 3-4 minutes then add turkey or chicken stock to cover and simmer for 5 minutes.
- Add shredded turkey, season if necessary, then add a little red Thai curry paste to taste, to give heat and pungency as desired.
