Ingredients

  • 50 g radishes,finely chopped
  • 1 spring onion,finely chopped or 1 tbsp freshly chopped chives
  • 1 garlic clove, crushed
  • 5 cm piece cucumber, finely chopped
  • 200 g natural yogurt
  • ground Black pepper
  • 4 flour tortillas
  • 350 g roast beef, thinly sliced
  • 85 g bag watercress,hard stalks removed
  • 2 tomatoes, roughly chopped

Method

  1. For the raita, mix the radishes, spring onions or chives, garlic, cucumber and yogurt. Season with salt and ground black pepper and refrigerate until needed.
  2. Heat the flour tortillas in a microwave according to the packet instructions. Spread each tortilla with a large spoonful of the raita and then top with the sliced roast beef. Add a handful of watercress and the tomato pieces. Roll up the tortillas, cut in half and serve.

Cook's tip

These wraps are a great way to use up leftover roast beef. Cold roast lamb works just as well but flavour with mint instead of chives
