Ingredients
- 2 medium potatoes, scrubbed
- 2 tbsp rapeseed oil
- 1 egg
- Ground black pepper to taste
- 50 g fresh breadcrumbs
- Grated rind ½ lemon
- 250 g No Catch Just Cod or organic Farmed cod
To serve
- 2 tbsp virtually fat-free natural yogurt
- 1 tbsp mayonnaise
- 1 tbsp freshly chopped parsely
- 1 tsp caper berries,drained and chopped
- ½ lemon, cut into wedges

Method
- Heat the oven to 240°C/220°C fan/ Gas 8.
- Cut the unpeeled potatoes into thick slices, then into thick chips. Place in a single layer on a roasting tin and drizzle with the oil. Bake for 15 minutes, turning once.
- Meanwhile, beat the egg with the pepper in a bowl and place the breadcrumbs on a plate with the grated lemon rind.
- Cut the fish into chunky strips. Dip the fish into the egg and then into the breadcrumbs, so each strip is well coated. Add to the baking tray with the chips and return to the oven for a further 10 minutes.
- Mix the yogurt and mayonnaise with the parsley and caper berries and serve with the fish, chips and lemon wedges.
