Ingredients

  • 1 tbsp olive oil, plus extra for drizzling
  • 150 g large flat open mushrooms, thickly sliced
  • 100 g closed cup mushrooms, thickly sliced
  • 2 cloves garlic, sliced
  • 2 slices country bread or ciabatta
  • 25 g parmesan, shaved
  • handful of rocket

Method

  1. Heat the oil in a pan and saute the mushrooms for 4-5 minutes until golden.
  2. Add the garlic and saute for another 2 minutes. Season with salt and pepper.
  3. Meanwhile, griddle or toast the bread and cut into halves.
  4. Arrange the bread on the plates and pile on the mushrooms.
  5. Top with Parmesan and rocket and drizzle with a little more oil.
