Ingredients
- 1 tbsp olive oil, plus extra for drizzling
- 150 g large flat open mushrooms, thickly sliced
- 100 g closed cup mushrooms, thickly sliced
- 2 cloves garlic, sliced
- 2 slices country bread or ciabatta
- 25 g parmesan, shaved
- handful of rocket

Method
- Heat the oil in a pan and saute the mushrooms for 4-5 minutes until golden.
- Add the garlic and saute for another 2 minutes. Season with salt and pepper.
- Meanwhile, griddle or toast the bread and cut into halves.
- Arrange the bread on the plates and pile on the mushrooms.
- Top with Parmesan and rocket and drizzle with a little more oil.
