Ingredients

  • 1 baguette
  • 6 tbsp pesto sauce
  • 250 g pack mozzarella for pizza, sliced
  • 4 slices Italian salami, halved
  • 2 tomatoes, sliced
  • 1 little gem lettuce, broken into leaves
  • a drizzle of olive oil
  • salt
  • freshly ground black pepper

Method

  1. Use a serrated knife to cut a top slice off the length of the baguette; reserve the lid. Now use your fingers to tear out the soft bread in the middle of the loaf (see Cooks tip).
  2. Spread the pesto sauce along the inside of the loaf and lid. Fill the loaf with the sliced mozzarella, tomatoes, salami and lettuce. Drizzle over the olive oil and season to taste.
  3. Put the lid back on the loaf and cut into four sections. Wrap the loaf in greaseproof paper and chill until required

Cook's tip

Cooks tip Save the breadcrumbs from this loaf and use them in stuffing or to top grilled vegetables. They can be frozen then crumbled and used straight from frozen. Or use them in the following meatball or treacle tart recipe!
