Recipe details

This recipes uses a bag of Tesco Wholefood Fruit and Nut with Cranberry as its easier and cheaper than buying separate packs of the plump sultanas, raisins, cranberries and crunchy almonds and cashew nuts it contains. However as long as you keep the weight the same you could replace it with any combination of dried fruit and nuts you like. Similarly if you don't like coconut then replace it with some more oats instead.

      • 397 g Can sweetened condensed milk
      • 300 g Bag Tesco Wholefoods fruit & nut mix with cranberry
      • 250 g Finest porridge oats
      • 50 g Desiccated coconut
      • 25 g Sunflower seeds
      • 25 g Pumpkin seeds

      Method

      Fruit and Nut Breakfast Bars

      1. Preheat the oven 150C/300C/Gas Mark 2 Lightly oil a 23x33cm rectangular baking tray.
      2. Place the condensed milk in a large pan and bring slowly to the boil.
      3. Empty the fruit and nut mix onto a chopping board and roughly chop with a large knife to break up the whole almonds and cashews.
      4. Remove the pan of milk from the heat, stir in the fruit and nut, oats, coconut and sunflower seeds.
      5. Mix well with a wooden spoon then tip into the prepared tin and level the surface with the back of a wetted spoon.
      6. Bake for 40-45mins or until pale golden.
      7. Remove from the oven and cool for 15mins. Mark into 16 bars before leaving to cool. Once baked store in an airtight tin for upto 10 days.
