Ingredients

  • 2 Fairtrade mangoes, peeled
  • 1 small red onion, finely diced
  • 1 red chilli, finely chopped
  • bunch coriander
  • 2 tbsp tbsp olive oil
  • 1 juice of lemon
  • pinch freshly ground Fairtrade black pepper
  • 2 Fairtrade avocados, halved
  • 8 large prawns, cooked

Method

  1. Cut the mango flesh from the stone and dice. Place in a bowl along with the onion, chilli and coriander. Add the olive oil, lemon juice and black pepper, and mix.
  2. Peel the avocados, remove the stones, then spoon the salsa into their hollows. Top each half with two cooked prawns and a sprig of coriander before serving.

Cook's tip

• bunch coriander, few sprigs reserved for garnish and the rest chopped
