Recipe for Avocado filled with prawns and mango salsa

Fantastically easy and bursting with fresh flavours, this makes a great starter or, if you double the quantity, can be enjoyed as a substantial main meal.

Ingredients
- 2 Fairtrade mangoes, peeled
- 1 small red onion, finely diced
- 1 red chilli, finely chopped
- bunch coriander
- 2 tbsp tbsp olive oil
- 1 juice of lemon
- pinch freshly ground Fairtrade black pepper
- 2 Fairtrade avocados, halved
- 8 large prawns, cooked

Method
- Cut the mango flesh from the stone and dice. Place in a bowl along with the onion, chilli and coriander. Add the olive oil, lemon juice and black pepper, and mix.
- Peel the avocados, remove the stones, then spoon the salsa into their hollows. Top each half with two cooked prawns and a sprig of coriander before serving.
