- 2 medium free-range eggs
- 2 tbsp milk or cream
- salt and ground black pepper

- 1 slice of smoked salmon
- snipped fresh chives

Method
- In a medium bowl crack the eggs, add the milk and a little seasoning. Beat until smooth with the egg whisk.
- Put the bread in a toaster and cook until golden. Lay the toast on a bread board then use a heart shaped cutter to press put heart shapes. Keep warm.
- Heat the pan, add the butter and when it melts, pour in the egg. Cook over a gentle heat, stirring with the wooden spoon until the egg has scrambled.
- Spoon the eggs onto a plate, top with the smoked salmon and toast hearts. Scatter over the chives and serve.

A heart shaped cutter, 1 medium bowl, a knob of butter and a wooden spoon
