Recipe for Eggy Bread with Maple and Bacon

It may sound strange, but the combination of salty bacon and sweet maple syrup tastes sensational with eggy bread. It’s a firm favourite Stateside and will soon become one of yours. It’s the perfect start to Easter Sunday.

Ingredients
- 6 medium free-range eggs
- 3 tbsp milk
- salt and freshly ground black pepper
- 4 slices crusty white bread
- 2 tsp vegetable oil
- 8 rashers streaky bacon
- maple syrup to serve

Method
- Beat the eggs and milk together with a little salt and ground black pepper. Pour into a shallow bowl. Place two slices of bread in the egg mixture whilst you heat a large non-stick frying pan.
- When the pan is hot, add half the oil and the soaked bread. Cook for 6 minutes, turning once until the bread is golden on both sides and cooked through. Transfer to a plate and keep warm in the oven. Repeat with the remaining 2 slices of bread and egg.
- Whilst the egg cooks, grill the bacon for 5 minutes, turning once until crisp and golden. To serve, cut the eggy bread in half and stack one half against the other. Top with the bacon and drizzle with maple syrup before serving.
