Premo Pinot Noir - Red New Zealand Wine
This wine has been crafted from some of the oldest vines in the Waipara Valley, grown on clay and limestone rich soils. It shows complex forest floor aromas and savoury spice. The palate is fine and elegant and is perfectly balanced. The structure is ripe and underpinned by subtle integrated oak. This wine will reward patient cellaring. Cellar with confidence of screwcap.

Each vineyard block was hand harvested separately. After de-stemming the grapes are tipped into small open topped fermenters and cold soaked for 6-7 days with daily pump-overs. The parcels then undergo an un-inoculated fermentation with hand plunging twice daily. Post ferment the vats stay on skins for up to 4 weeks with gentle plunging until the desired tannin integration are achieved. After pressing the wines go into French oak before undergoing natural Malolactic fermentation.
Bruce and Jill Moore planted the first vines on the property (Waipara Springs) in 1982 and formed a partnership with Andrew and Stephanie Grant, business owners in their own right. Son, Andrew Moore has an agricultural degree and has been managing the business (now Southern Boundary Wines) for the last 7 years .
Located 45 minutes north of Christchurch in the South Island of New Zealand, the sunny Waipara Valley is home to 3,000 acres (1,200 Ha) of vines. Waipara Valley is a unique wine growing region with eastern mountains protecting a beautiful basin from cool easterly winds. Warm sunny summer days and cool nights make this region a special jewel in the New Zealand wine crown. Waipara Valley consistently produces quality wines each vintage.
