The grapes are selected from only the best vineyards in Puglia, where sea breezes temper the heat of the day and allow the grapes to ripen gently. The grapes are crushed in a pneumatic press and undergo fermentation and maceration in temperature controlled stainless steel tanks at approximately 26°C to extract the maximum flavour and colour from the grapes. The wine then undergoes a natural malo-lactic fermentation, followed by clarification, cold stabilisation and cross-flow filtration before bottling.
Puglia has an ancient tradition of winemaking, dating back to Greek colonisation in the 8th century BC, and continued under Roman rule. The vineyard area was completely destroyed following the outbreak of Phylloxera in the late 19th century, but this was followed by extensive new plantings. During the early to mid- 20th century Puglia became the largest wine producing region in Italy, but more recently the focus has shifted towards low-volume, high-quality wine production.
The region of Puglia lies on what is commonly referred to as the “heel” of Italy. The topography is fairly flat and temperatures can be very hot during the summer, but these are mitigated by sea breezes, especially on the Salento peninsular. Second only to Sicily in terms of number of vineyards, Puglia has historically been home to many native red grapes, such as Primitivo and Negroamaro, though more recently high-quality white wines such as Fiano have started to be produced.
