Local law dictates that just 5,000 sacks of coffee can leave St Cristobal each year. It thrives in the unique microclimate created by the cold Humboldt and warm Panama currents, and has complex brown sugar and plum flavours that make it a favourite with coffee lovers.

Once opened, reseal the pack by rolling down the top of the bagand secure with
the tab. Store in a freezer, refrigerator or cool place. The flavour and aroma
of coffee deteriorates once in contact with air. The pack has a one way valve
which allows the coffee to be packed immediately after roasting and grinding to
maintain freshness. Use within 2 weeks of opening. Best before end: see top of
pack. Packaged in a protective atmosphere.
OUR COFFEE CONSULTANT, FRED VERBOOM, SUGGESTS... If your making coffee in a cafetiere, warm the pot first. Use about one rounded dessert spoonful of coffee per person - you can make it more or less depending on how strong you like it. Once you've boiled the water, wait 10 seconds before pouring to avoid scolding the coffee. Then leave it to brew for three to five minutes longer for a stronger coffee - with the plunger off. You can use the same guide for the quantity of coffee if your using a filter machine. For a moka pot, fill the filter basket evenly with coffee, without patting it down. Brew the coffee on a medium heat for about 5 minutes. Always follow manufacturers guidelines.
