Grape Variety:

Vinification Details:

Harvest starts at the end of August with the Macabeo, and ends in early October with Parellada. The grapes are hand-picked and brought swiftly to the winery. Presses gently extract the precious grape juice which is transferred to stainless steel fermentation tanks, keeping each grape variety seperate. The first fermentation is done at controlled low temperatures of between 14 and 16°C and lasts 10-15 days. Once complete the Cava spends between 12 and 18 months maturing in the same bottle before release

Regional Information:

In Catalunya, vineyards of these white varietals stretch from the mountains, where Parellada grapes are typically planted due to their resistance to harsh weather, to the coast, where Xarel-lo and Macabeo thrive in the warm, moist climate. Because the coastal vineyards ripen much earlier than those further inland, the harvest often lasts from early September through to late October
