This Thai Red Curry is Amy's dad's favourite. It has finely cut vegetables - sautéed onions, broccoli, carrots, tofu and delightfully sweet butternut squash in an authentically spiced smooth coconut milk-based curry sauce. Fragrant jasmine rice completes this meal that has no dairy and no wheat, and is absolutely delicious.

After the birth of our daughter Amy in 1987 we found there was little time to prepare the wholesome nutritious food we normally ate. Realising there were others like us, we set up Amy's Kitchen to produce delicious frozen meals for health-conscious people too busy to cook. We use only the finest natural ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. Cooking Instructions (General): Cook from frozen. Consume immediately after heating. Do not refreeze.
Oven cook (From Frozen): Preheat oven to 190°C/375°F. Remove paper tray from box. Remove overwrap and cover paper tray with aluminium foil (foil should not touch food). Place on baking tray and bake for 40-45 minutes until piping hot. Let stand 2 minutes before serving.
Ovens vary, so please use these instructions as a guide only. For fan-assisted ovens, cooking times should be reduced. For best results refer to manufacturer's handbook.
Microwave (From Frozen): (800 W):
Make a 1-inch slit in top of overwrap. Heat on high for 5 minutes. Remove overwrap and gently stir. Cook for another 1 minute until piping hot. Let stand 2 minutes before serving.
