Cabernet Sauvignon Shiraz Red Australian Wine
Houghton Cabernet Sauvignon Shiraz is a medium bodied, easy drinking blend of Cabernet Sauvignon and Shiraz. The delicious fruit flavours and juicy tannins are enhanced with light oak in a savoury and eminently pleasing rich style.

Shiraz/Syrah, Merlot, Malbec
The fruit was machine harvested in the cool of night to retain flavour and freshness. Fermented in static fermenters for ten days the wine was gently pressed off skins, to complete alcoholic fermentation in stainless steel tank. The wine was then racked and inoculated for malolactic fermentation. Following malolactic fermentation the wine spent 10 months maturation in oak before select parcels were blended and prepared for bottling.
Fruit was predominately sourced from the Great Southern region the south-west of Western Australia. Ross Pamment began his winemaking career as a Cellar Hand at Houghton in the Swan Valley in 1989 before working in Burgundy and throughout Europe. He then completed a Bachelor of Science in Oenology before taking on a role as Winemaker in Eden Valley, South Australia followed by Assistant Winemaker with Salitage. In October 1999, Ross rejoined the winemaking team at Houghton in the Swan Valley.
Western Australia experienced an average winter but above average rainfall in Spring 2011. The South West of Western Australia then experienced above average rainfall at the beginning of harvest, combined with above average maximum temperatures and warm nights. The 2012 vintage was the hottest on record in terms of heatwaves, these weather patterns resulted in the harvest of fruit a week ahead of normal as ideal flavour, sugar and acid balance was achieved very rapidly.
