A Moroccan style spice blend with paprika, chilli & rose petals.
Ras El Hanout means head of the shop and represents the very best spices the shopkeeper has to offer. This blend includes fragrant rose petals, Egyptian fennel seeds, roasted cumin and pink peppercorns along with 14 other carefully selected spices. Used extensively in Middle Eastern and North African Cuisine it adds a mild exotic flavour to Chicken, Lamb and couscous.

- Store in a cool, dry place and out of direct sunlight.

Dish: Fruity Chicken Tagine
Prep Time: 10 minutes
Cooking time: 1 hour 30 minutes
4 chicken thighs
1 Large onion, sliced
2 garlic cloves, crushed
2 tbsp olive oil
2/3 tbsp Finest Roasted Ras El Hanout
300ml chicken stock
2 apples, sliced
8 dried apricots, halved
Freshly chopped coriander (optional)
• Take the chicken and slash the skin on each thigh three times.
• In a bowl mix together the chicken, onion, garlic, olive oil and the Finest
Roasted Ras El Hanout Blend. Cover and refrigerate for 1 hour.
• Remove from the refrigerator and fry in a large pan for 5 minutes until
• Add the chicken stock and simmer gently over a low heat with the lid on for 1
hour or until the chicken is cooked through.
• Add the apples, apricots and prunes. Simmer for a further 25 minutes.
• Scatter with freshly chopped coriander and serve with couscous.
Check food is piping hot throughout before serving.
