The pasta factory "Faella" was established in 1907. Its founder was Gaetano Faella, who spent his whole life producing the "good" durum wheat semolina pasta, inspiring himself to the culture of his native village of Gragnano, where producing pasta has always been an "art".
In the respect of an artisan production of making "e' Maccarun' buon", as Gaetano's son Mario loves to say, Pastificio Faella selects several semolina to be mixed for the daily production, proceeding with a slow dough of semolina and spring-water (funnel), bronze plate drawing and static drying in cells (from 18 up to 48 hours) at low temperature (max 48 °C) - this is a long and detailed procedure who gives to the product a good consistence and taste, keeping all the organoleptic characteristics of the raw materials (durum wheat semolina).
