Vinification Details
Once the pressing has taken place the wine although held within temperature controlled tanks is allowed a certain freedom to start its fermentation process and is then brought under control having allowed the wine to extract good colour and soften its tannins. The wine has a long fermentation period with a certain amount of pumping over to help drive a degree of ageing. The wine is then fined and racked into further stainless steel tanks prior to filtration and bottling.
