Store in a cool dry place and once cooked in an airtight container.
Adjust times according to your particular oven. (For fan assisted ovens cooking times should be reduced. For best results refer to manufacturer's handbook.) All appliances vary these are guidelines only. Not suitable for microwave cooking.
Ingredients: 1 medium egg; 60ml semi skimmed milk; 60g softened unsalted butter. Method: 1. Pre-heat the oven to 180°C/160°C Fan Oven/ Gas Mark 4. 2. Place the 6 cake cases in a muffin tray or on a baking tray. 3. Add the cake mix, egg & milk to a bowl. 4. Mix using an electric or hand whisk for 1 minute. 5. Divide the mix equally between the 6 cases. 6. Place into the centre of the oven and bake for 18 minutes until golden brown. 7. Once baked, leave to cool in the tray for 5 minutes and then transfer to a cooling wire. 8. Once cool remove the paper cases and slice the cakes across the middle 9. Save a teaspoon of sugar from the icing sachet for decorating. 10. Whisk together the icing with the soft butter until light and fluffy. 11. Once the cakes are cold spread some of the buttercream onto one half of each cake and some of the jam onto the other half of each cake and sandwich together 12. Sift the remaining sugar over the cakes.
