Couscous is a North African dish made from wheat semolina of superior quality. Due to a great progress in communication, and as a result of relations between people of different countries, the consumption of couscous has increased throughout the world and specifically in Europe and North America. Couscous is made from semolina and water, without additives, and has high nutritional values. Couscous is light, delicious, and can be prepared very quickly. Couscous can be served as a side dish with: meat, chicken, fish or just vegetables.

Microwave (From Ambient): In a large microwave bowl combine 1 1/2 cups of boiling water, 1 tablespoon of Osem Consommé (optional) and 2 tablespoon of olive oil with the contents of bag (1 1/2 cups of Couscous). Stir well, cover and microwave or 3 minutes. Fluff cooked Couscous with a fork. Season to taste. Add a tablespoon of olive oil (optional) and let stand uncovered for 5 minutes before serving. Serve with your favorite vegetables, meat, chicken or fish. For added flavor, in a separate pan, sauté an onion in olive oil and add to cooked Couscous before serving.
Preparation and Usage:
Osem Couscous & Vegetables
For 4 servings
1 pkg of Osem Couscous
6 garlic cloves, crushed
2 medium sized onions
1/2 - 3/4 cup oil (olive oil recommended)
2 hot peppers, finely chopped
3 medium sized zucchini
2 sweet green peppers, diced
1 sweet red pepper, diced
4 tomatoes, diced
1/2 head of white cabbage, cut in quarters
3 medium size squashes
3 carrots, cut in half
1 canned chickpeas
Salt and pepper to taste
Prepare the couscous according to instructions on the package.
Heat oil in a deep wide pan. Add crushed garlic, whole onions and the rest of the vegetables (but the chickpeas), and cook on medium to high heat, for about 10 minutes until golden brown.
Add 7 cups of water, salt and pepper and bring to a boil. Reduce heat, add the chickpeas and cook about 45 minutes.
Place prepared couscous in a large wide bowl. Spoon out the vegetables and place on top of the couscous. Pour over remaining sauce and serve.
Couscous goes well with any combination of cooked vegetables you care to use. This dish can be made with all of the vegetables mentioned above, a selection of them, or using whichever of your favorite vegetables.
