Cabernet Shiraz - Red Australian Wine
Willunga 100 is based in McLaren Vale in South Australia. It has long been a tradition in the Vale to hang an olive branch over your door as a way of announcing the production of a good quality wine. This lively Cabernet Shiraz displays aromatics of cherries, plums and subtle mint, combined with savoury, spicy flavours and supple tannins on the palate. It was aged in French oak.

This is a serious wine with aromas of dark plum, cherry, spice and earthy undertones. It is rich and generous, with dark berries on the palate and a good long tannin structure, integrated with older French oak. It will age very well.

Cabernet Sauvignon, Shiraz/Syrah
Parcels of both Cabernet Sauvignon and Shiraz were harvested from a range of suitable blocks during March and April. Some cooler sites were used for Cabernet Sauvignon to enhance the blend profile, while the ripe, juicy Shiraz adds tannin and spice. Each parcel was fermented separately in a combination of open fermenters and stainless steel pump-over tanks. Warm to hot ferment temperatures, combined with regular pump-overs and plunging, ensured optimum extraction, whilst maintaining fruit purity. Timely pressing, only using the best presses ensured good quality of flavour. The wine was then matured in both French and American oak and bottled under screwcap to maintain freshness and ensure longevity. 70% Cabernet Sauvignon, 30% Shiraz.
Willunga 100 is in McLaren Vale, south of Adelaide. The grapes for the Willunga wines come from a range of selected vineyards in McLaren Vale and Adelaide Hills, including some over 50 years old. Wines were made by Steve Pannell and Kate Day up to 2010 and now by Tim James and Kate Day. They use modern equipment alongside traditional winemaking techniques, including open-top fermenters, to ferment the small parcels of fruit arriving at the winery. Willunga 100 aims to produce unique and distinctive wines which capture the essence of the region. The Olive Branch name comes from the long tradition in McLaren Vale of hanging an olive branch over your door as a way of announcing the production of a good quality wine.
The Cabernet and Shiraz come from darker 'Terra Rossa' soils which contribute to rich, bold tannins. All the vineyards are managed to produce the highest quality possible with only the best parcels selected for Willunga 100. The climate of McLaren Vale is often compared to that of the Mediterranean, warm sunny days, with sea breeze influences from the nearby Gulf of St Vincent. These warm days in union with the cooling maritime evening changes are perfect for ripening the grapes whilst maintaining a crisp, clean and fresh structure.
This wine is ideal for drinking now but can be kept for up to 4 years
