Châteauneuf du Pape Red French Wine
This is a delicious example, sourced from premium vineyards; it has layers of flavours, starting with raspberries, through herbs and spices and ultimately black pepper. A deep rich complex wine, so match it with the same style of foods, herb crusted roast lamb and rich beef stews are ideal. It will repay you handsomely if you open it 30 minutes before drinking.
Of the 100's of winemaking villages in the Rhône valley only 16 of them have been awarded the highest quality Cru status. The most world famous of these villages is Châteauneuf du Pape. Here the soils are almost completely hidden by large flat stones that radiate their stored heat during the night, the result is grapes that have high natural sugars, full of depth and concentration. Add to this the fact that Châteauneuf du Pape can be made from up to 13 different varieties and the result is, quite simply, one of the worlds most internationally famous wines.

One week's maceration prior to a long and slow traditional fermentation taking up to three weeks depending on the individual tanks. The wine is then racked into oak casks, where it matures for at least six months, prior to final blending and then bottling
One of the best known wines in the world, Chateauneuf du Pape is produced from grapes grown in the famous pebbly vineyards that surround the village of the same name. The wines for Les Dauphins come from selected individual growers, which are then blended together under the expertise of Thierry Walet, Cellier des Dauphins' chief winemaker.
