Vinification Details:

The alcoholic fermentation is a temperature controlled process in stainless steel tanks. At the start of the new year the wines are classified for ageing and put to the first stage (Criadera) of the Solera System. Pale Cream is a very pale straw colour wine with a light, clean, fresh aroma and smooth and creamy flavour. Its raw materials are a special selection of wines from biologically aged wines from the Controlled Area. Serve with ice or well chilled.


Cia Vinicola del Sur, S.A. was founded in 1926 with quality being the target to be achieved. This objective has been reached throughout the history of the company...with many growers. The winery benefits from modern pneumatic presses, temperature controlled stainless steel fermentation tanks, 5000 barrels and brand new bottling facilities.

Regional Information:

Montilla-Moriles is a Denomination of Origin with a total production surface of 10,500 hectares divided in 2 sub-regions: standard quality (called Ruedos) and high quality (Sierra de Montilla and Moriles Alto). The Combination of high temperatures of the region during the summer season and the chalky (Albariza) soil allows us to achieve a potential high natural alcohol contents without the the need of fortifying agents despite the early start of the harvest (last week of August).
