Grapes were selected at optimal ripeness and hand harvested from vineyards in the Rapel Valley. They were then transported to the winery in Las Palmeras where they were destemmed, crushed, and deposited into stainless steel tanks for vinification. The must was held at 8º–10ºC (46º–50ºF) for a 2–5-day pre-fermentation cold soak to extract and conserve primary aromas and color. Fermentation took place with selected yeasts at controlled temperatures of 25º–28ºC (77º–82ºF). Upon completion of the alcoholic fermentation, some tanks underwent a 2–4-day post-fermentation maceration, depending on the characteristics of the wine in the tank. Malolactic fermentation took place naturally, with temperatures controlled daily in order to obtain an easy drinking style.
With prime vineyards in Casablanca, Maipo, Rapel and Bio-Bio and access to the newest and best clones in Chile (through Jose Guilisasti, brother of Emiliana’s General Manager Rafael who runs Chile’s foremost nursery) Emiliana is a very substantial and impressive organisation. As South America’s largest organic producer, with 250 hectares of IMO and Demeter certified vineyards and a further 250 hectares in conversion, their spectacular vineyard and winery at Los Robles has the added benefit of being biodynamic.
Sourced from the Rapel Valley, approximately 100 miles south of Santiago this viticultural zone includes the sub valleys of Cachapoal and Colchagua. Rapel offers good drainage and high fertility especially for red varietals. The Climate is Mediterranean due to the low, even hills of the coastal mountain range to the west which allows the cooling influences from the Pacific Ocean to moderate temperatures.
This wine is ideal for drinking now but can be kept for up to 2 years
