Vinification is carried out on contact with the skins for about 10 days in stainless steel tanks at a temperature of 24-26 °C. Once alcoholic fermentation is completed, the wine undergoes an initial clarification and is left to develop for 6 months in medium-sized barrels to mellow the flavours and enhance its aromas.
Teroldego is probably the oldest quality grape variety cultivated in Trentino. Teroldego producers were the first to establish a consortium in 1948 for the protection of Teroldego Rotaliano and the first in 1970 to obtain Denominazione di Origine Controllata status.
Production area: on well-drained terraces in the Adige and Vallagarina valleys, on a gravelly matrix of alluvial origins and at the foot of alluvial cones on limestone, medium-deep soils with plenty of skeleton.
