Preparation and Usage:
Only natural ingredients used. Can be used as a dip with crackers or vegetables. Spread on bread/ sandwiches. Toss with pasta; Season fish; Stuff cherry tomatoes & avocado halves; Add to pasta/rice sauces; Top pizzas. Meze - fingerfood and appetizers to savour and share from the Greek Mediterranean table.
Not-So-Classic Nicoise Salad with Gaea "Kalamata Olive Tapenade"
For 4-6 servings
For the Dressing:
2 tbs. balsamic vinegar
2 tsp. Dijon mustard
3/4 cup Gaea "D.O.P. Sitia, Crete Extra Virgin OliveOil"
1/2 cup Gaea "Kalamata Olive Tapenade"
2 garlic cloves, minced
1/2 bunch flat-leaf parsley, leaves only, finely chopped
1/2 celery rib, minced
For the Salad:
1/2 cup basil leaves, cut into thin strips
Sea salt and freshly ground black pepper to taste
500 gr. fresh green beans, trimmed & steamed to al dente
180 gr. (16 1/2 ounce) can tuna - good quality white or albacore, drained well
8 anchovy fillets (preferably packed in olive oil), drained
Gaea "Flame Roasted Red Peppers", cut into think rings
1 small red onion, cut into thin rings
2 hard boiled eggs, peeled and halved
Prepare the dressing: Place all the ingredients for the dressing in a jar and shake very well until the oil and vinegar are emulsified. Set aside.
Cut the anchovies in half lengthwise.
Layer the salad in a serving bowl as follows: First the green beans, then half the dressing. Top with peppers, onions, tuna, eggs, and anchovies in that order. Pour over remaining dressing, toss and serve.
Other serving suggestions & recipes for Gaea "Kalamata Olive Tapenade"
With tomatoes in spicy salads. Try it in a vinaigrette with Gaea "D.O.P. Sitia, Crete Extra Virgin Olive Oil", cumin, cayenne, garlic, sherry vinegar & toss the dressing in a spinach-tomato salad with onions.
Addition to homemade pesto. Try pureeing the "Kalamata Olive Tapenade", with 2/3 cup walnuts, 1 bunch fresh parsley, 2 garlic cloves, 1/2 cup grated parmesan and 3 tablespoons extra virgin olive oil, and serve it over hot spaghetti.
