For best results always cook from frozen. Remove all packaging. Place one portion on a non-metallic plate. Dot with butter and season with salt and pepper. Cover loosely. Timings are based on 2-3 portions at a time.


Temperature:375°F, Gas 5, 190°C

Cover with wine, stock, milk or water.
Cook in the centre of a pre-heated oven for 30-35 minutes.

Name of recipe suggestion: Mediterranean Style Cod Bake


540g Cod Portion (Frozen)
1 x 400g tin of chopped tomatoes
2 cloves of garlic, finely chopped
1 medium onion, chopped
1/2 red pepper, thinly sliced
1/2 green (or yellow) pepper, thinly sliced
1 tsp dried basil
1 tsp dried coriander
2 tbsp olive oil
salt & black ground pepper


1.Preheat oven to 190oC/375oF Gas Mark 5
2. Place the Cod Fillets on the bottom of an ovenproof dish
3. Gently fry the peppers and onion in a frying pan with a little olive oil
until the onion has softened
4.Drain off about 1/2 the juice of the tinned tomatoes
5. Mix the tomatoes in a mixing bowl with the onion and peppers, add the
chopped garlic, basil & coriander & season with salt & ground black pepper
6 Pour the mixture over the cod and place in the centre of the preheated oven,
cook for 45 minutes or until food is piping hot.

To Serve:

Serve on a bed of boiled rice
