Vinification Details
After a fermentation of a week with regular pumping over to extract a vibrant colour and some soft tannins, part of the wine was matured in wood to enhance the structure of the middle palate.
History
Fairhills Rawsonville, South Africa was set up in 2005 and is the largest Fairtrade project in the world, whereby over 1000 people benefit from the premiums generated. Every bottle sold helps to build daycare centres, schools and community centres.
Regional Information
The 11 Fairtrade farms attached to the Du Toitskloof coop are situated in the Breede Valley, one of South Africa's largest wine producing regions set against the backdrop of spectacular mountains.
