Method: Hob and Grill
Ingredients: 500g Tesco Frozen Minced Lamb; 1 onion, chopped; 2 medium sized
carrots, peeled and diced; 2 x 15ml(2 tbsp.) plain flour; 300ml (1/2) ping lamb
or beef stocks 2 x 5 ml (2tsp) Worcestershire sauce'; salt and freshly ground
black pepper; 125g frozen peas, 900g potatoes, peeled, 2 x 15ml (4-5tbps) milk,
25g cheddar cheese, grated.
1. Fry the mince, onions and carrots in a large frying pan for 8-10 minutes or
until browned. Add the flour and cook, stirring form 1 minute.
2. Gradually stir in the stock. Add the Worcestershire sauce and salt and
pepper. Bring to the boil, cover and simmer for 30 minutes or until
thickened. Stir in the peas and simmer for a further 5 minutes.
3. Meanwhile, cook the potatoes in boiling salted water for 8-10 minutes or
until tender. Drain, then mash until smooth. Add the parsley, butter and milk
and use a fork to beat until fluffy.
4. Spoon the mince into a 1.5 litre(2½ pint) ovenproof dish. Top with the
mashed potato. Sprinkle the cheese over the top. Cook under a medium grill
for 6-8 minutes until golden.
