225g butter, softened;
225g caster sugar,
225g Tesco orgaic self raising flour
2 tsp baking powder
For the filling:
4 tbsp Tesco strawberry jam,
150g butter, softened;
150g icing sugar,
Icing sugar for dusting.
2 deep loose bottomed 20cm/8inch sandwich tins
Non stick baking paper
1. Lightly grease and line the tins.
2. Pre-heat the oven to 180°C/Fan 160°C/Gas Mark 4.
3. Place the butter, sugar, eggs, flour and baking powder into a large bowl and
mix for about two minutes using an electric mixer.
4. Divide the mixture evenly between the prepared tins and level the surface
with the back of a spoon or a plastic spatula.
5. Bake for 25 - 30 minutes, until well risen and golden. The tops of the cakes
should spring back when pressed lightly with a finger. Leave the cakes to cool
in the tins for a few minutes, then turn the cakes out on to a wire rack, peel
off the paper and leave to cool completely.
6. To make the butter cream beat the butter and icing sugar together using an
electric mixer until light and fluffy.
7. Spread the jam evenly on one half of the cake and top with the butter cream.
Place the other half of the cake on top. Finally dust the top of the cake with
a little icing sugar.
