The grapes were harvested during the cool of the night, then cooled to around 10C to retain the fresh primary fruit aromas and flavours, before being crushed gently using a pneumatic press. The juice was then clarified, then fermented in temperature controlled stainless steel tanks. The wine was allowed to remain on light yeast lees for a period to add creamy, nutty flavours. Some components were fermented on French oak to add depth and a subtle toasty character.

Fruit is select from vineyards from Del Rios, Australia. The climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. The climate is also continental, resulting in long sunny days & noticeably cooler nights. Modern viticultural & winemaking techniques mean that the climate can be seen as one of the region's strengths. Long sunshine hours ensure fruit ripens fully & low relative humidity results in little incidence of disease.
