Shiraz - Red Australian Wine
Our 2005 Shiraz is made from 100% Shiraz grown in the Clare Valley of South Australia, from the vineyards of the Adams, Crawley, Eldredge, Maynard, Smith, Jenner and Ardill families.
Fermentation on skins for seven days preceded pressing, with all pressings returned to the blend. the wine has been aged in American oak hogsheads for twelve months to add richness and complexity. Bottling was in October 2006.
The wine is full bodied with blackberry / mulberry / violet aromas and flavours typical of this variety grown in the Clare Valley. It will continue to improve for a decade if cellared with care. With time this wine may deposit a crust and so should be decanted accordingly.

Full bodied and refined, this is a ripe, robust and generously flavoured wine of dark, black conserve fruit flavours.

All components of this blend were fermented on skins to dryness before being pressed, with all pressings being returned to the wine. The wine spent 12 months in American oak in our coolroom before blending, fining and bottling in October 2006.
Tim Adams Wines was founded in 1985 and has grown from a crush of just 85 tonnes then to around 900 tonnes today winning a string of international awards. It sources its purely Clare fruit via a network of loyal growers and it's own vineyards.
Lying north of Adelaide, South Australia's Clare Valley has a combination of soils, altitude and climate which make it unique among Australian regions for production of a wide range of wines.
