Preparation and Usage:

Handling Tips
Allow pastry to sit at room temperature for 2 hours before use. Never remove filo from its plastic bag until ready to use. Remove just the amount of sheets necessary, and immediately cover with a plastic sheet or damp towel. Replace balance in original bag and seal tightly, either refrigerate or freeze. Frozen pastry should be placed in a refrigerator for 24 hours before use. Unused pastry should be used within 1 week. Melted butter or an alternative should be brushed onto each sheet during use.

Recipes:

Baklava
Makes: 8-12, Prep time: 10mins, Cook time: 1 hour
Filling: 500g chopped almonds or walnuts (or Mixed Nuts), 2 teaspoons of cinnamon and 175g melted unsalted butter.
Method:
1. Grease a rectangular baking dish.
2. Take approx 5 filo leaves, basting between leaves with butter.
3. Spread 1/2 nut mixture and cover with approx. 5 filo sheets as before. Spread remainder of nut mixture and cover with 5 basted filo sheets. Brush top sheet.
4. Place in hot oven 325°F (160°C) for 3/4 - 1 hour until golden brown and crisp. Remove when cooked and cut as required, allow to cool.
Syrup: Make syrup by bringing to the boil 120g sugar, 250ml water and 300g honey then allowing to simmer for approx. 20 minutes on a low heat without stirring. Add 1 teaspoon lemon juice. Pour over the pastry. Allow to stand for at least 2 hours before serving.
Note: Be sure that pastry has cooled to room temperature before pouring hot syrup.

Strawberry Filo Tarts
Makes: 4, Prep time: 10mins, Cook time: 10mins
Ingredients: 25g butter, melted, 200g filo pastry, 150-180ml thick custard, 3-4tbsp whipped cream, 2tbsp brandy or liqueur
About 20 large strawberries, Icing sugar.
Method:
1. Preheat the oven to 200°C/400°F/gas Mark 6. Place four individual loose-bottomed flan tins on a baking tray and brush lightly with melted butter.
2. Cut the filo pastry into pieces 12-14cm square. Brush each piece with melted butter and layer at least three pieces loosely in each dish with the extra hanging over the edges. Bake in the oven for 10-12 minutes, until golden and crisp. Cool.
3. Spoon the custard into a mixing bowl, fold in the cream and liqueur. Divide evenly between the four cases and smooth the tops.
4. When ready to serve arrange the halved strawberries on top of the custard and finally dredge with a little sieved icing sugar.
