Guideline Daily Amount Summary
120g lamb roasted then trimmed of fat contains
Boneless rolled lamb shoulder
Allow meat to rest at room temperature for 10 minutes before cooking.
Oven 190°C/ Fan 170°C/ Gas 5
Season lamb shoulder with salt and pepper.
Place joint in a roasting tray and cook in the centre of a pre-heated oven.
Calculate the cooking times at 7 minutes per 100g (medium) and 9 minutes per
100g (well done). Allow joint to rest for 10 minutes before serving. Remove
netting/string prior to serving.
