The Pearson family are enjoying the good life...

Did you know?

Chickens don't have teeth! They use the grit in their gizzards to grind up food. There are two types of grit:

  • Hard – for digestion
  • Calcium – this dissolves in the stomach and provides calcium for egg production.

Week 7: The good life

The chickens are having a profound effect on the Pearson family. Yes, they provide a daily supply of eggs, but as Lucy is realising, simply living this good life makes it easier to protect the environment…

The other day I was half-watching a current affairs show about reducing our carbon footprint, when I realised that one of the people on the sofa was The Good Life actress, Felicity Kendall. The Good Life (a 1970s sitcom, for those of you too young to remember!) told the hilarious story of one couple who threw aside the trappings of modern life to embrace self-sufficiency.

Anyway, I began to reflect on how we find ourselves in a similar situation: keeping chickens, attempting to grow our own fruit and vegetables and cutting down on our consumption of unnecessary everything.

One-pot cooking

Which brings me to back to… eggs of course! Less packaging, less waste and if you make a meal using only one pan, less mess, less washing up and less fuel used to cook.

Here are our favourite one-pot recipes that we are cooking – on our one-ring stove (yes, still no kitchen!):

  • Asparagus, Herb and Cheese Omelette
  • Warm Egg and Bacon Salad
  • Scrambled Egg with Smoked Salmon
  • French Toast
  • Vegetable Foo Yung
  • And my absolute favourite… Eggs Benedict

Check out our Eat Greener section for more egg recipes.
