Method

1. Preheat the oven to 200°C/180°C fan/Gas 6. Mix together the flour, salt, baking powder and spices in a medium mixing bowl. Set aside.
2. Put the butter and sugars in a medium mixing bowl and beat together until light and fluffy. Gradually add the eggs and vanilla, and beat until thoroughly combined.
3. Add the flour mixture and beat to a smooth dough. Wrap the dough in clingfilm and refrigerate for about 30 minutes until firm.
4. Dust the work surface with flour and roll out the dough to about 5mm thick. Using Christmas-themed cutters, cut out shapes and transfer to a greased baking sheet. 
5. Refrigerate on the baking sheet for 15 minutes before cooking, then bake for 8 to 10 minutes until golden.
6. Transfer to a wire rack until cool. Repeat with remaining dough.
7. When all the biscuits are cool, mix together the icing sugar with 2 to 3 tbsp of water and food colouring and drizzle onto your biscuits. If adding decorations, such as chocolate drops, put them on while the icing is still wet.
8. Leave to set before serving.

150g caster sugar
50g demerara sugar
2 large eggs
2 tsp vanilla extract
100g icing sugar
½ tbsp water
Food colouring and writing icing
Chocolate drops (optional)
