Method

1. Divide the broken sponge fingers between serving glasses. If you’re making this recipe for adults, add a little raspberry liqueur or Marsala wine to their sponge fingers at this point.
2. Put half the raspberries into a bowl and add the icing sugar. Roughly crush the berries until quite juicy. Stir in the lemon zest and remaining raspberries.
3. Divide this mixture between the glasses and top with the custard.
4. Whip the cream until it holds soft peaks, then divide between the glasses. Refrigerate (for at least 2 hours) until needed.
5. Just before serving, decorate with grated white chocolate.

150ml double cream
25g white chocolate, finely grated
