Couscous is quick and easy to prepare and combines well with chicken, vegetables and dried or fresh fruit, so you can make lots of lovely combinations.

Cooking time: 10 minutes
1. Melt the butter in a saucepan and sauté the onion and carrot for 4 minutes. Add the diced chicken and sauté for 2 minutes.
2. Pour over the stock, add the peas and bring to the boil. Then reduce the heat, cover the pan and cook for 3 minutes or until the chicken and peas are cooked through.
3. Remove from the heat and stir in the couscous. Set aside for about 6 minutes, by which time the couscous should have absorbed all the stock. Fluff the couscous with a fork before serving.
