Method

  • With a sharp knife, remove the inside flesh of the halved oranges and scrape out the pith, taking care not to make a hole in the orange skins. 
  • Make up the jelly according to the packet instructions, but only use about four-fifths of the water, so that the jelly is a little more concentrated than usual, then fill each of the hollow orange halves with jelly right to the top. It helps if you place your jelly halves in muffin or bun tins to keep them steady.
  • Refrigerate the oranges until the jelly is set (allow 3-4 hours), and then trim the orange halves so that the skin of the orange is level with the jelly, and cut the oranges in half again with a sharp knife.
  • Cut triangles out of the rice paper and secure with cocktail sticks
    to make sails.
