Method

  1. Start with a tall glass or ice cream bowl. Make your fruit sauce by whizzing your chosen fruits in a blender with a little honey or maple syrup (if required). Berries make a really luscious red sauce, while apricots and peaches make a great orange-coloured sauce. Add a little water if the sauce is too thick.
  2. Pour a little of the sauce into your glass or bowl, add a scoop of ice cream and stir gently so that the sauce ‘marbles’ the ice cream. Next, add some chopped fruit, such as banana or strawberry, topped with a little more sauce.
  3. Continue adding ice cream, sauce and fruit until you are both satisfied that you’ve got enough layers.
  4. To complete the sundae, you could add some whipped cream – pour some cream into a bowl and whip with an electric whisk (or by hand if you’ve got the energy!) until the cream forms soft peaks. Add the cream to your sundae and sprinkle with grated chocolate, chopped fruit, crushed honeycomb or another topping of your choice.
