Method

  1. Heat the oil and fry the onion and garlic until soft, this will take about 10 minutes. Transfer to a plate. 
  2. Squeeze the sausage meat out of the skins and add to the pan, you may need to add a little more oil to the pan if there is none left after the onions. Fry the sausage meat for 5-10 minutes until the sausage is lightly browned. 
  3. Add the wine if you have some opened and leave to bubble away for a few minutes. 
  4. Add the tinned tomatoes, olives, parsley or rosemary and sugar and simmer gently (uncovered) for 15 minutes. You may need to add a little water to loosen the sauce slightly. 
  5. Meanwhile bring a large pan of water to the boil. Add the pasta and cook according to the packet instructions.

Ingredients

  • 2tbsp olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, peeled and crushed
  • 6 good quality sausages
  • Glass of red wine – if you have a bottle open
  • 400g tinned chopped tomatoes
  • Handful of olives, stoned removed
  • Handful fresh parsley, chopped
  • 1tsp light soft brown sugar
  • 400g penne pasta (or other pasta of your choice)
