- Preheat the oven to 180ºC/350ºF/Gas Mark 4. Cut out three squares of greaseproof paper, big enough to wrap around the salmon fillets.
- Finely chop the olives and tomatoes. Put a salmon fillet in the middle of each square of paper and scatter over the olives and tomatoes.
- Top with a little basil, drizzle each fillet with a tsp of oil and a squeeze of lemon juice. Bring the paper up either side of the salmon and fold over the edges to seal.
- Cook for 10 mins. Check the fish is cooked – if not, cook for a few more mins. Serve with veg and couscous.
