Description

These fajitas are super nutritious. The tortillas are a good source of carbs, the chicken has protein and the avocado provides vitamin E.

Method

  1. Put the lime juice, garlic, chilli and oil into a bowl, mix and season. Add the chicken, cover and leave for at least 30 mins.
  2. To make the guacamole, scoop the avocado flesh into a food processor, add the garlic, lime juice and half the coriander. Whizz into a smooth purée, add the remaining coriander and season to taste.
  3. Heat a heavy-based frying or griddle pan until really hot and cook the chicken for 3-4 mins on each side until cooked through.
  4. Heat the tortillas, fill with chicken, a little sour cream and some lettuce, and serve with the guacamole and cherry tomatoes.

  • 3 chicken breasts, cut into strips
  • 8 flour tortillas
  • 8tbsp sour cream
  • 2 ripe avocados
  • 1 clove garlic, finely chopped
  • Juice of half a lime
  • Handful of coriander, finely chopped
