Ingredients

  • 2 chicken thigh fillets
  • 1tbsp sunflower oil
  • 50g chopped onion
  • 225g sweet potato, peeled and chopped
  • 40g dried apricots, halved
  • 200ml chicken stock
  • 150ml passata

Method

  1. 01 Remove the meat from the chicken thighs and discard the skin and fat. Cut into chunks.
  2. 02 Heat the oil in a pan and saute the onion for 4 minutes or until softened but not coloured.
  3. 03 Add the chunks of chicken thigh and sauté for about 2 minutes.
  4. 04 Add the sweet potato and sauté for one minute.
  5. 05 Stir in the chopped apricots and pour over the chicken stock and passata.
  6. 06 Bring to the boil, then cover and simmer for about 12 minutes or until tender.
  7. 07 Blend to a puree.
